A small city in the highlands of Jalisco surrounded by blue agave fields and the first landscape in the world designated as a UNESCO cultural landscape for its association with an agricultural product. The town center preserves colonial architecture around a main plaza, and several distilleries — from artisanal operations to large industrial facilities — offer tours of the production process from raw agave harvesting to barrel aging. The train journey from Guadalajara to the town passes through fields of mature agave plants.
